Phyllis M. Lubiniecki

Phyllis M. Lubiniecki passed away peacefully on July 18, 2026, surrounded by the love of those whose lives she touched so deeply.

Born in Albany, NY, Phyllis was the cherished daughter of the late John and Florence Knighton (Espey). She was predeceased by her beloved husband and best friend, Kenneth L. Lubiniecki (L-Ken), with whom she shared a lifetime of love and adventure, especially the unforgettable memories made with friends and family at their legendary drive-in, L-Ken’s, and their place in the Florida Keys.

Phyllis warmly welcomed countless guests as a server at The Desmond and the Saratoga Race Course. During the summer, she also assisted Kenny with daily operations at L-Ken’s, ensuring there were always beautiful flowers planted around the stand. Her kindness, dedication, and incredible work ethic made a lasting impression on coworkers and patrons alike.

Phyllis is survived by her loving children, Roger Groff Jr. and step-daughter Kimberly Lubiniecki; her sister, Eileen Burnham (Tim) and her brother, Jimmy Knighton, along with many cherished nieces, nephews, extended family members, and dear lifelong friends who will forever hold her memory close.

The family would also like to extend their gratitude to the staff of Evergreen Commons for the exceptional care shown to Phyllis and her family during her final days. Your kindness will never be forgotten.

Family and friends are invited to attend calling hours on Saturday, July 25, 2026, from 10:00 a.m. to 12:00 p.m. at New Comer Cremations & Funerals, 343 New Karner Road, Colonie, NY 12205. A funeral service will begin at 12:00 p.m., with interment immediately following at Memory Gardens Cemetery.

In lieu of flowers, the family welcomes memorial donations made to Community Hospice in honor of Phyllis Lubiniecki.
